Banana Cufflinks or Banana Ketchup?


Tonight I am being treated to a slightly unusual home cooked meal, which has more than a hint of the Caribbean about it. For the starter we are having a coconut & bean soup, jerk pork with rice & beans for the main and pineapple with lime & vanilla syrup for desert. Perhaps the strangest element of the meal though, will be the banana ketchup.
As you may have guessed, my girlfriend watches a lot of home cooking shows, and as it turns out today is St. Lucia’s Independence Day, hence the reason for the banana ketchup (a traditional produce of St. Lucia, or so I am told).
I have only visited the island once whilst on a cruise and apart from the glorious beaches and bustling markets, I mostly remember trying the delicious cocktails. My favourites are the fruity flavoured ones as they remind me of the days spent sitting in the sun on sandy beaches.
Needless to say, my contribution towards the meal will be making the drinks. I plan to make an assortment of citrus infused cocktails, garnished with wedges of lemon and lime. Maybe even some of those little cocktail umbrellas.
